CHICKEN CASSOULET

4 chicken breasts, cubed                              2 cans red kidney beans
1/2 c. chopped celery                                   1 can Italian stewed tomatoes
2 cans northern beans                                  1/2 c. chopped onion
1 pkg. Kielbasa sausage, sliced                      1 1/4 c. water

Combine all ingredients and pour into slow cooker. Cover and cook on low for 8 hours.
Shopping List: 4 boneless, skinless chicken breasts, 2 cans northern beans, 2 cans red kidney beans, celery, 1 package Kielbasa sausage, 1 can Italian stewed tomatoes **AOH** onion

SHRIMP CREOLE


1 1/2 c celery, diced                                    1 clove garlic                           
1 1/4 c onion, chopped                                 1 tsp salt (or to taste)
3/4 c bell pepper, chopped                          1/4 tsp pepper (or to taste)
1 (8 oz) can tomato sauce                            6 drops hot sauce (optional)
1 (29 oz) can whole tomatoes                       1 lb shrimp, deveined & shelled

Combine all ingredients, except shrimp, in slow cooker.  Cover and cook 4-6 hours on low.  Add shrimp during last hour of cooking. 

Shopping List: celery, 2 lg bell peppers, 8 oz can tomato sauce, 29 oz can whole tomatoes, 1 lb shrimp  **AOH** onion, garlic, salt, pepper, hot sauce

 

 

MEXICAN CHICKEN CHOWDER

2 1/2 c cooked chicken, chopped           1 pkg taco seasoning mix                          
1 can whole kernel corn                          3 c chicken broth                                
1 can cream of potato soup                    8 oz sour cream
4 oz can diced green chiles, undrained  4 oz jalapeno pepper cheese spread
2 T snipped fresh cilantro

In a slow cooker, combine chicken, corn, potato soup, chiles, cilantro and taco seasoning. Stir in chicken broth. Cover and cook on low for 8-10 hours. Remove 1 cup of hot soup and combine with sour cream in a bowl. Stir sour cream mixture and cheese into the soup in slow cooker. Cover and let stand for 5 minutes.

Shopping List: 1 1/2 lbs boneless/skinless chicken, 1 can whole kernel corn, 1 can condensed cream of potato soup, 4 oz can diced green chiles, fresh cilantro, 1 pkg taco seasoning mix, 24 oz chicken broth, 8 oz sour cream, 4 oz jalapeno pepper cheese spread
